Biochemistry. A biogenic amine classified within the vitamin B complex that plays an important role in metabolism. It is important as a precursor of acetylcholine and a basic constituent of lecithin. Choline is found in egg yolk, liver, corn, legumes, and milk. Choline deficiency leads to fatty liver and increased sensibility to certain chemical carcinogens.
