Biochemistry. A class of fat-soluble pigments in plants. They are responsible for the red, yellow, and orange color of fruits and vegetables. Carotenoids play an important role as biological antioxidants in human tissue. The most common carotenoids are beta-carotene, lycopene, and lutein.
